I would not suggest hydrangea for the corsage or boutonniere, it is to big for such a small accessory. White phalaenopsis would be look so pretty with a light blue dress. You can do white phalaenopsis orchid paired with a rose or a couple of spray roses for the corsage. And a single white phalaenopsis orchid for the boutonniere.
